This cake. Seriously though, this cake. Just hearing the name makes me drool: Cinnamon Roll Cake. Two of my favorite things, mashed together in a wonderfully delicious treat.
You know back in the day when Cinnabon was around and you would walk through the mall or airport and you were hit with the overwhelming smell of an amazing cinnamon roll. That smell is this cake realized, but better.
I love a good cinnamon roll, but they can be time consuming with the rising and kneading. But what is the best part of the Cinnamon Roll? If you said the inside, then we can continue being friends.
And the most important part of the inside is when you mix it with the ooey gooey frosting and it combines to make the perfect bite. You have to have the perfect ratio of dough to glaze. This Cinnamon Roll Cake Recipe is the much easier version of the inside of the cinnamon roll.
If you want something that people will give you mad compliments on, then make this. (am I too old to say mad compliments?) Also, have a big glass of milk ready when you eat this cake. The craving for milk was immediate.

Yep, that’s really all you need to make a cinnamon roll cake from scratch! Even better? This only takes about 10 minutes to mix together before going in the oven for about 30-40 minutes. Come on, you know I wouldn’t share this recipe if it wasn’t an easy cinnamon roll cake!

Ahh yes, the age-old question: how much is too much when it comes to cinnamon? We want a strong cinnamon flavor, but we certainly don’t want our cake to taste downright spicy! In this recipe, I’m recommending 1 tablespoon of cinnamon throughout the whole dish. While that might not sound like a lot, trust me – it’s plenty to give a strong cinnamon flavor! We’ll be adding the cinnamon into the topping of the cake itself.
There are so many different ways to make cinnamon roll frosting! Some people use powdered sugar alone, while others use cream cheese or even condensed milk. In this cinnamon roll cake recipe, we’re keeping it simple, with powdered sugar, milk and vanilla extract. These ingredients come together to make a really delicious, sweet glaze that tastes just like those shopping mall cinnamon rolls.
Definitely! I think of this cake a lot like I think about coffee cake or banana bread. It can be frozen and still taste delicious weeks or months later. However, if you do plan on freezing this cake you’ll want to do it carefully.
I’d recommend making the cake batter and topping and then baking. Once the cake is cooled, wrap it in parchment paper and then a few layers of plastic wrap. You might even want to add a layer of tinfoil to really protect it from the cold.

I’ve never tried, but I imagine you could! I would bake for the same amount of time and then check it and then continue baking if needed and check as needed. Let me know if it works!
