Apple Cider Baked Donuts

Ingredients

1 teaspoon ground cinnamon
pinch nutmeg
pinch salt
3/4 cup apple cider
2 eggs, beaten lightly
3 Tablespoons oil
1 teaspoon pure vanilla
Topping
2/3 cup cinnamon sugar
4 Tablespoons melted butter

Instructions

1. Preheat oven to 325 degrees. Grease a donut hole pan or a mini muffin pan with non stick spray.
2. In a large bowl, whisk together the flour, sugars, baking powder, cinnamon, nutmeg and salt. Stir in the apple cider, eggs, oil and vanilla. Gently mix until just combined, don not over mix.
3. Using a cookie dough scoop or large spoon, spoon batter into the pan. Bake for about 8-10 minutes. Donut hole should spring back when done.
4. Remove from oven and cool in the pan for about 5 minutes. Then transfer holes to a wire rack.
5. Brush the melted butter all over the donut hole then roll in the cinnamon sugar mixture to cover completely. Serve immediately or store in an airtight container.
