I am not a gluten free, dairy free, vegan kind of person, however I do keep thinking I need to try some of those recipes to share because I know there are a ton of people searching for good desserts that they can still eat. So my crack at it this time was for a friend who is breastfeeding and following the MSPI diet. 

First thing is first, breastfeeding is freaking hard. And then if you have to add in diet restrictions on top of it, you are my hero because all I wanted to eat was junk and crap and sugar. So when a friend was coming over to watch the Huskers play, I decided to try a little MSPI friendly brownie. And they turned out really good! So easy too. I got this recipe over on the MSPI Mama website, she has tons of good MSPI friendly recipes. 

No mixer needed, one bowl and basically throw everything in and stir. This would totally hit the spot if you are craving some chocolate but bambino doesn’t agree with butter that comes in most desserts.

mspi Brownies

No mixer needed, one bowl and basically throw everything in and stir. This would totally hit the spot if you are craving some chocolate but bambino doesn’t agree with butter that comes in most desserts.

Prep time: 10 min  |  Cook time: 22  |  Total: 32 min

Ingredients

½ cup canola oil
1 cup sugar
1 teaspoon pure vanilla extract
2 eggs
½ cup all-purpose flour
⅓ cup unsweetened cocoa powder
¼ teaspoon baking powder
¼ teaspoon salt

Instructions

1. Preheat the oven to 350 degrees. Spray a 9×9 inch pan with nonstick spray.
2. In a large bowl, mix the sugar, oil and vanilla together. Then beat in the eggs.
3. Add the flour, cocoa, baking powder and salt into the egg mixture and mix until combined. Dough will be thick.
4. Spread evenly into the baking dish. Bake for 20-22 minutes. Let cool, then slice and eat!
