Leftover Halloween Candy Cookies

Perfect and fun way to use all that leftover Halloween candy. Grab your favorites and add them to my favorite cookie base. So fun!

Ingredients

1 cup (2 sticks) butter, room temperature
1 cup sugar
1 cup brown sugar
2 large eggs
1 teaspoon pure vanilla extract
2-1/2 cups flour
1 teaspoon baking soda
½ teaspoon salt
2 cups leftover Halloween candy (about 30 bite-sized pieces chopped plus extra chunks to add to the tops)

Instructions

1. In a mixer, beat the butter, regular sugar and brown sugar together until smooth. Add the vanilla and eggs and beat again until well combined.
2. Add the flour, baking soda and salt. Mix again until combined. Add the chopped Halloween candy and mix on low speed.
3. To bake cookies right away- Scoop about 2 Tablespoons size of dough onto your cookie sheet prepared with parchment paper or Silpat about 2 inches apart. Press some more chunks of Halloween candy to the tops then bake at 350 degrees for 9-11 minutes until the edges are just turning golden brown.
4. To freeze the cookie dough- Scoop 2 tablespoon-sized portions of dough onto the baking sheet prepared with parchment or Silpat. Press a few extra pieces of chopped candy into the tops of each scoop of cookie dough.
5. Place baking sheet in the freezer for at least 15 minutes. Take dough out of the freezer and transfer to a freezer-safe plastic container or plastic bag. Return the dough to the freezer and store until ready to bake. Dough can be stored in the freezer for up to 3 months.
6. When craving a cookie, simply remove the number of cookies you want from the freezer and bake at 350 degrees for 12-14 minutes.
