1. Preheat oven to 250 degrees. Set aside a baking sheet prepared with parchment or Silpat.
2. In a large bowl, whip the egg white and water until frothy. In a separate small bowl, mix the sugar, salt and cinnamon.
3. Add pecans to the egg whites and stir to coat all the pecans evenly. Pour the sugar mix over the pecans and mix again until all the pecans are covered.
4. Spread the nuts onto the prepared baking sheet. Bake at 250 degrees for 1 hour , stir every 15 minutes. Remove, let cool and enjoy your new addiction.
