Who doesn’t love sprinkles? (or jimmies depending on where you may be located) I will use sprinkles since I’m a midwest girlie. They just make everything happier and I like happy. I will choose the happy treat every time. We are coming out of Christmas baking mode, but I am thinking about New Year’s Eve treats. I’m not a big NYE celebrator. Mainly because I”m getting older, don’t enjoy big crowds or real pants and have a toddler. So I imagine my NYE will be very low key.

However, I will be trading in the bars and sequin dresses for one of these Funfetti cupcakes with my hubby and my favorite girl. I’d say that is a great trade in my book.

These Funfetti cupcakes are super easy and just a vanilla cupcake who got into her mama’s makeup. Perfect for a festive and fun NYE. Do you guys have big New Year’s Eve plans? Can I live vicariously through you?

Funfetti Cupcakes

Ingredients

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon kosher salt

2/3 cup whole milk

1 1/2 teaspoons pure vanilla extract

1/2 cup butter, room temperature

1 cup sugar

1 large egg

2 large egg whites

Vanilla Buttercream Frosting

1 cup (2 sticks) salted butter, room temperature

4 cups powdered sugar

1/4 cup heavy cream

2 teaspoons pure vanilla extract

1/4 teaspoon salt

Instructions

  1. Preheat the oven to 325 degrees, line a cupcake pan with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate small bowl, stir together the milk and vanilla.
  3. In the bowl of a stand mixer, beat the butter and sugar on medium-high speed until light and fluffy, about 2 minutes. Reduce the speed to medium-low, slowly add the egg and egg whites one at a time, and beat until creamy, About 1 minute.
  4. Slowly add half the flour mixture, then the milk mixture, then the remaining flour mixture, beating until just blended after each addition. Remove bowl from the mixer and fold in the sprinkles.
  5. Fill the liners about 2/3 full and bake until the tops are just dry to the touch and a toothpick inserted into the center comes out clean, 18-20 minutes. (20-22 minutes for a cake) Transfer the pan to a wire rack and cool completely before frosting.
  6. Frosting: Using a handheld or stand mixer, beat the butter for about 2 minutes until fluffy.
  7. Add the powdered sugar 1 cup at a time, mix after each addition. Then add the vanilla, heavy cream and salt. Add more powdered sugar for a thicker frosting and more cream for a thinner frosting.
  8. Frost cooled cupcakes and add sprinkles to decorate.
