Leah loves bananas. Abby loves peanut butter. I love chocolate. It was a no brainer to make these little nuggets. They are healthy-ish treats and so good and popable. The combination of peanut butter, banana and chocolate are up there on my favorites list. Peanut butter and chocolate takes the top spot, but add the banana and I am a very happy Lolo.

These are easy. Really easy. Basically, make little banana sandwiches with peanut butter in the middle, freeze, then dip in melted chocolate and freeze again. These are great right out of the freezer and in my opinion even better when just a little thawed. Heatlhy-ish and easy little treats that are perfect for you and your kiddos.

Peanut Butter Chocolate Banana Bites

Easy and yummy Peanut Butter Banana Chocolate Bites! A fun and healthy treat you and your kiddos will love!

Ingredients

3 ripe bananas

1/4 cup peanut butter or your favorite nut butter

10 ounces dark chocolate chopped (or whatever chocolate you have on hand. You can also use chocolate chips)

2 teaspoons coconut oil (optional)

Instructions

  1. Cut banana into slices (about 1/4 inch). Set aside half of the slices and arrange the other half on a baking sheet lined with parchment paper.
  2. Heat peanut butter in the microwave on low/medium for about 30 seconds until it’s just a bit smoother so it’s easily spreadable.
  3. Spoon a bit of the peanut butter on the banana slices you arranged on the baking sheet. Top with the other half of the banana slices. Freeze for at least an hour.
  4. Once the banana slices are frozen, time to melt the chocolate. Place chopped chocolate (or chocolate chips) in a microwave-safe bowl along with the coconut oil (if using). Microwave in 30 seconds bursts, stirring in between each, until chocolate is fully melted and smooth. (watch carefully)
  5. Using a fork, dip each frozen banana bite in the melted chocolate and roll to cover all sides. Shake off excess chocolate and place back on the baking sheet. Repeat with all the banana sandwiches.
  6. Place the chocolate covered bites back in the freezer until set. Store in the freezer.
