Full disclosure, I made three batches of lemon bars last week. Dave looked at me like I was crazy. But the first batch was a different recipe and it was kinda thin and I wasn’t a big fan. Second batch was a big hit and I gave those to my friend as a thank you. Then I had to make a third batch because I still needed to take photos to use on the site. #foodbloggerproblems

Then I meant to take them to work today…..but I forgot them in the fridge this morning. So I have another night of these lemon bars in my house and I have a feeling that box might have a few missing when I deliver them tomorrow. I have no control.

When I posted about making these lemon bars, I had so many people message me asking for the recipe. Soooo….tah da! This one is an easy one with a big pay off. There’s just something about a lemon dessert that makes people happy. It’s light and refreshing and perfect for summer!

Lemon Bars

Ingredients

2 cups all-purpose flour

1 cup butter (2 sticks), melted]

1/2 cup powdered sugar, plus more for dusting

1/4 teaspoon kosher salt

2 cups sugar

4 eggs, slightly beaten

5 Tablespoons fresh lemon juice (about 2 lemons)

Instructions

  1. Preheat oven to 350 degrees. Spray a 9×13 pan with nonstick spray and set aside.
  2. In a medium bowl, combine the flour, powdered sugar and melted butter. Use a fork to combine gently until mixed. Using your fingers, press dough into the bottom of your prepared pan.
  3. Bake until the edges are just getting golden brown, about 20 minutes.
  4. Next, in a mixer, mix the eggs, sugar and lemon juice until well mixed. About 2 minutes.
  5. When the crust is done, pour lemon mixture over the hot crust. Bake again for about 15-20 minutes or until the middle is set but still slightly jiggly.
  6. Remove from the oven, let cool completely and then dust the top with more powdered sugar.
  7. Make sure these are completely cool, or refrigerate before cutting. Makes life much easier!
