Summer is coming to an end, kids are going back to school but we all know it will still be 90 degrees for several more weeks. So let the summer treats continue!

These are incredibly easy and healthy so I won’t feel bad giving these to Leah or eating one every day for a week. You do you. You can try these with other fruits as well or add other fruits to the strawberry. For sure will be trying strawberry and banana next batch.

I got these popsicle molds from Amazon, cheap and easy. Exactly why I like Amazon. Amazon and I get along just fine. My husband, not as much of a fan.

Strawberry Yogurt Popsicles

Leah had a great time helping with these, pouring in the molds, placing the stick in the mold. Total mess, but she had fun.

Ingredients

1 pound fresh strawberries, hulled and chopped

1/4 cup sugar

1 teaspoon lemon juice

1 Cup Greek yogurt (vanilla, strawberry or plain)

Instructions

Combine the strawberries and sugar in a small bowl. Let sit about 20 minutes, stirring occasionally. The fruit will soften and become syrupy.

Pour the strawberries and syrup into a food processor or blender. Add the lemon juice and pulse a few times until the fruit is pureed.

Stir the yogurt into the strawberry mixture until combined. Pour into molds and freeze for at least 8 hours or overnight. To remove, run hot water over the outside of the mold until you can gently pull the popsicle out.
