I basically have zero memories of any holiday family gathering in my lie without these cheese potatoes on the table. Sometimes there may even be two batches because we all love them. A lot. I have no idea who started this recipe, where it came from but I do know that BOTH sides of my family are big fans of these cheese potatoes.

I’m not sure which is the best part of this dish. The soft potatoes covered in a melty cheese sauce or the fried crunchy onions overtop the entire thing. Pro tip- snack on some of the crunchy fried onions while it cooks. Don’t get carried away, but I feel like it should be in the directions.

You should definitely add this to your holiday meals or even just a comfort dinner on a regular night. Not hard to make and incredibly yummy!

Cheese Potatoes

Soft chunks of potatoes covered in a melty cheese sauce with (the best part) crispy fried onions over top the whole thing. Perfect side of comfort food.

Ingredients

2 Tablespoons butter

2 Tablespoons flour

2 cups milk

1 lb Velveeta Cheese, cubed

3 cans sliced or dice white potatoes, drained

Parmesan Cheese

French’s crispy fried onions

Instructions

  1. Preheat oven to 325 degrees. In a large saute pan, melt the Hiland butter. Add the flour and stir to make a paste. Cook for about 1-2 minutes. Add the milk a little at a time, whisking between each addition until combined without lumps.
  2. Cook for several minutes until thickened, about 5-7 minutes. Once thick, add the Velveeta and stir every minute until melted and smooth. Turn heat to low.
  3. In a 9×13 baking dish, spray with nonstick spray. Add the potatoes to the bottom of the pan.
  4. Pour the melted cheese sauce over the potatoes so all are covered. Sprinkle parmesan cheese to make a thin layer overtop. Cook for 45 minutes.
  5. Remove from oven and sprinkle with the crispy onions. place back in the oven for another 25 minutes. Remove and serve warm.
