What do you do with a box of cornflakes? Eat them? That’s the obvious answer. The baking-blogger-with-too-many-ideas-running-through-her-head answer would be “make cookies, of course!”

Although I do have childhood memories of a big bowl of cornflakes topped with sugar, honey and sliced bananas. Man, I miss the 80s.

These are Milk Chocolate Chip Cornflake Cookies and they are so good! I love the crunch and the slight saltiness it brings to the sweet cookie. Soft in the middle, because that’s my favorite kind. Easy to make too because that’s also my favorite kind.

Chocolate Chip Cornflake Cookies

Ingredients

1 cup butter, softened

1 cup sugar

1 cup brown sugar, lightly packed

1 cup vegetable oil

1 large egg

1 teaspoon baking soda

1 teaspoon kosher salt

1 teaspoon pure vanilla extract

1 cup quick oats

3 1/2 cups all-purpose flour

1 cup cornflakes

2 cups chocolate chips

Instructions

  1. In a stand mixer, cream the butter, brown sugar and regular sugar until light and fluffy. About 1-2 minutes.
  2. Add oil, eggs and vanilla and mix until smooth. Add oats, flour, baking soda and salt and mix again on low until just combined.
  3. Add in cornflakes and chocolate chips, mix on low again until just combined.
  4. Place dough in foil or plastic wrap and chill for at least 1 hour.
  5. Once chilled, preheat oven to 350 degrees. Line a cookie sheet with a silpat mat or nonstick baking spray.
  6. Scoop balls of dough (about 2 tablespoons) onto the baking sheet about 2 inches apart. Press down lightly with the palm of your hand to flatten out the balls slightly.
  7. Add extra chocolate chips and cornflakes to the top of the cookie dough before baking. Bake for 9-10 minutes. Cool on baking sheet for about 5 minutes then move to a cookie sheet. Enjoy!!
