These cookies are based on the Cowboy Cookie that Laura Bush made famous with her family recipe. So it’s a little of that and a little of liberty by Lolo. I’ve also been looking for a way to incorporate my new favorite granola by The Gourmet Granola. It’s so good!! Nebraska small company with a husband and wife team and it’s so good!! (dairy free, gluten free, soy free) So what I did was swap out the oats for the granola. I found out granola makes a cookie super soft which is my favorite type of cookie. You can use any flavor of granola, but I used the peanut butter one and it totally made this cookie. Slight peanut butter flavor and a soft texture. Packed with chocolate chunks, pecans and coconut too. It’s sweet and salty and I’m obsessed!!

Chocolate Granola Cookies

Ingredients

1 1/2 sticks (3/4 cup) butter,(melted)

1 1/2 cups brown sugar (packed)

1 large egg

1 egg yolk

1 teaspoon pure vanilla extract

1 3/4 cups all-purpose flour

3/4 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon kosher salt

1 1/2 cups The Gourmet Granola Peanut Butter Granola

4 ounces semisweet baking chocolate (chopped)

1 cup shredded coconut

1 cup chopped pecans

Instructions

  1. Preheat oven to 350 degrees. Line baking sheets with Silpat mats Set aside.
  2. Add the melted butter and brown sugar to a stand mixer bowl, mix on low until combined.
  3. Add in the egg, egg yolk, and vanilla and mix until well combined, About 1 minute.
  4. Add the flour, baking powder, baking soda, and salt. Mix on low again until just combined.
  5. Add granola and mix again on low. Add the chocolate, pecans, and coconut, and mix again.
  6. Drop dough using a large cookie scoop (about 1 1/2 Tablespoon) 2 inches apart on baking sheet.
  7. Bake about 8 minutes. The cookies will still look underdone. Take them out and let them cool about 5 minutes ad then transfer to a cooling rack. Enjoy!
