I won an amazing gift pack from Tasty Good Toffee and I can’t tell you how excited I was! I LOVE toffee. Like really love it. One of my favorite tastes, it gives me all kinds of nostalgic memories of my Grandma. I got it in the mail, tasted it and realized it was probably some of the best toffee I’ve ever had. AMAZING! She sent me some toffee pieces to try in my baking as well so I literally got to baking that night.

First up, this super simple but so good, toffee Cookie. The taste of brown sugar caramel flavors come through with this one in a soft cookie with crispy edges. So good and really easy too. I love an easy cookie.

Toffee Cookies

Ingredients

  • 3/4 cup (12 Tablespoons) butter, room temperature3/4 cup granulated sugar3/4 cup packed brown sugar

    1 teaspoon baking soda

    1/2 teaspoon kosher salt

    1 teaspoon pure vanilla extract

    2 large eggs

    2 3/4 cups all-purpose flour

    1 1/2 to 2 cups toffee bits (or chocolate covered toffee bits)

    1 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350 degrees. Line two baking sheets with a Silpat or spray with nonstick spray.
  2. In a stand mixer, combine the butter, granulated sugar, brown sugar, baking soda and salt. Mix on med-high for 1-2 minutes, scrape down the sides of the bowl as needed.
  3. Add the vanilla and eggs, mix again another 1-2 minutes until fluffy.
  4. Add flour and toffee bits (optional chocolate chips) then mix again on low until all combined.
  5. Using a large cookie scoop, scoop large balls of dough onto the baking sheet about 2 inches apart. Bake for 11-12 minutes or until edges look set, middle will still look soft.
  6. Let sit and cool on the baking sheet for another 5 minutes before moving them to a cooling rack.
