Air Fryer Salmon Bowl with Rice

An easy recipe for Air Fryer Salmon and Rice Bowl. Marinaded salmon cooked quickly in the air fryer and paired together in a big bowl with edamame, avocado, rice, and a big drizzle of a sweet and savory Yum Yum Sauce.

Ingredients

2 salmon filets

Marinade/Sauce

2 Tablespoons Low Sodium Soy Sauce

1 teaspoon sesame oil

1 tablespoon honey

1 teaspoon minced garlic or garlic powder

1/2 teaspoon kosher salt

Yum Yum Sauce

1 cup mayonnaise

1 teaspoon tomato paste

1 teaspoon sugar

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon kosher salt

1 Tablespoon butter, melted

12 Tablespoons water

Bowl

2 cups brown rice, cooked

1/2 cup edamame, cooked

1 avocado, sliced

Instructions

1. Dry the salmon filets with a paper towel, then cut into 2 inch pieces. Set aside. In a bowl, add the soy sauce, sesame oil, honey, garlic, and salt and mix together. Add the salmon pieces to the marinade and mix together so the salmon is covered. Let sit for 3-4 minutes.

2. Preheat Air Fryer to 400 degrees. Once ready, spray basket with non stick spray. Place the salmon pieces in the air fryer basket in a single layer. Cook for 6 minutes, flipping pieces halfway through.

3. While the salmon cooks, prepare the yum yum sauce. In a bowl, mix the mayo, tomato paste, sugar, garlic, paprika, salt, melted butter, and water. Mix together and set aside.

4. Once the salmon is cooked, prepare the bowl. Spoon a layer of brown rice on the bottom and top with the cooked edamame, avocado, and salmon. (spoon any extra marinade over the salmon) Drizzle Yum Yum sauce over top of everything. Mix together and dig in!

Notes

**To cook salmon in the oven: preheat oven to 375 degrees. Place marinated salmon pieces on a cooking sheet prepared with parchment paper or nonstick spray. Cook for about 15 minutes.

**Extra Yum Yum Sauce can be kept in an air tight container in the fridge for up to 1 week.
