Drumsticks are so simple but a major taste payoff. A crunchy sugar cone, vanilla ice cream, and chocolate. Lots of chocolate! That hard outer chocolate shell mixed with the cold and creamy vanilla ice cream is a summertime childhood memory I will have forever!
6 ice cream sugar cones
Hiland Dairy Vanilla ice cream (or any flavor)
2 cups semi-sweet chocolate chips
1 Tablespoon Coconut Oil
½ cup chopped peanuts optional
1. Line a cookie sheet with parchment paper and set aside.
2. Place a couple chocolate chips in the bottom of a sugar cone then scoop up vanilla ice cream and gently push it into the cone. Follow with another scoop of vanilla ice cream on top of the cone. Round it out.
3. Lay the filled cone on the cookie sheet. Continue with the rest of the cones and ice cream.
4. Place cookie sheet into the freezer to allow the ice cream to get solid, about an hour.
5. Before removing the cones from the freezer, pour the chocolate chips and coconut oil in a microwave safe bowl. Heat 30 seconds at a time, stirring after each time. Repeat until the chocolate is melted and smooth.
6. Remove the cookie sheet of cones from the freezer and spoon the chocolate over the ice cream on the cone until all covers. Sprinkle immediately with nuts. (or topping of choice)
7. Place the cones back onto the cookie sheet and into the freezer again to set for about 30 minutes.
8. Serve and enjoy!
To store, place the cones in a ziploc or airtight container and in the freezer.
