Breakfast is getting festive. These Eggnog Waffles are so good and full of that classic eggnog flavor we love. No major production to make these either, basically you’re just switching out the milk for the eggnog.
Waffles-
3 ½ cups all-purpose flour
2 Tablespoons sugar
2 Tablespoons baking powder
2 teaspoons kosher salt
1 ½ teaspoons cinnamon
½ teaspoon nutmeg
4 eggs
3 cups Hiland Dairy Eggnog
10 Tablespoons Hiland Dairy butter, melted
Cinnamon Whipped Cream
1 cup Hiland Dairy heavy cream
3 Tablespoons sugar
½ teaspoon cinnamon
1 teaspoon pure vanilla extract
In a large bowl, mix together the flour, baking powder, sugar, salt, cinnamon and nutmeg. Set aside.
In another bowl, whisk together the eggs, Hiland Dairy Eggnog and Hiland melted butter. Pour the eggnog mixture into the flour mixture and mix together until just combined.
To make waffles, spray the waffle maker with nonstick spray and pour about ¼ to ⅓ cup batter into the waffle maker. Cook each side 2-3 minutes and then remove. Repeat with remaining batter.
Cinnamon Whipped Cream: In a large bowl, combine the Hiland Dairy heavy cream, sugar, cinnamon and vanilla. Using a hand mixer or stand mixer and whip until soft peaks form.
Top waffles with whipped cream (and butter and syrup if you’re feeling fancy) and enjoy!
