Grandma’s Potato Salad

Ingredients

5lbs red or russet potatoes- peeled, boiled, cooled, chopped

910 hard boiled eggs- cooled, peeled, chopped

1/2 yellow onion- chopped

1 cup mayo

2 1/2 Tablespoons sugar (more to taste)

2 Tablespoons white vinegar (more to taste)

big pinch of salt and pepper

Instructions

1. Peel and boil the potatoes until a fork slides in easily. Drain and cool completely.

2. Hard boil eggs, cool and then peel.

3. In a medium bowl, mix together the 1 cup mayo, 2 1/2 Tablespoons sugar, 2 Tablespoons white vinegar, 1/2 onion- chopped, and a big pinch of salt and pepper. Taste test and then adjust to your taste preference.

4. Chop potatoes into cubes and add to a large bowl. Also chop the hard boiled eggs and add them to the same bowl.

5. Pour mayo mixture over the potatoes and eggs and mix so everything is covered.

6. Cover and chill in the fridge until ready to serve.
