1 pound boneless, skinless chicken tenderloins
Olive Oil
Big pinch of salt
Big pinch of pepper
¼ cup honey
¼ cup fresh lemon juice
½ cup low-sodium chicken broth
1 Tablespoon Dijon mustard
1 large lemon sliced
Chopped parsley for garnish, optional
Start by seasoning the chicken with a big pinch of salt and pepper on both sides.
Heat a large drizzle of olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 3-4 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside.
In a medium bowl, whisk together the 1/4 cup lemon juice, 1/4 cup honey, 1 Tablespoon dijon mustard and 1/2 cup chicken broth. Whisk together and add to the skillet. Bring to a boil and then turn heat to low.
Turn heat to low and then add chicken back to the skillet into the sauce. Cover the chicken in the lemon slices, cover with a lid and cook for 10 minutes for the chicken to absorb all that good flavor.
Garnish with fresh parsley and serve your lemon skillet chicken hot with a side of rice, mashed potatoes, or a crisp salad.
