Moose Tracks Ice Cream Cake starts with brownie base then layers of moose tracks, hot fudge, peanut butter sauce, oreos and whipped cream.
Brownie Base- box mix, store bought, or homemade brownie recipe
Jar of Hot Fudge
1/2 cup condensed milk
1/2 cup creamy peanut butter
1 teaspoon pure vanilla extract
5 Tablespoons water
Oreos- 20, crushed
Moose Tracks Ice Cream
Chocolate Syrup
Whipped Cream (Or Cool Whip)
1 cup heavy cream
2 Tablespoons sugar
1 teaspoon pure vanilla extract
1. If baking brownies from a box mix or homemade, be sure to cool brownies completely before assembling.
2. Prepare layers: Peanut Butter Ice Cream Topping- In a small saucepan on low to medium heat, add the condensed milk, peanut butter, and vanilla. Stir and heat until smooth. Add water one Tablespoon at a time, until desired consistency. Set aside.
3. Whipped Cream: In a medium bowl, add heavy cream, sugar, and vanilla. Using a handheld mixer or a stand mixer, mix on medium high speed for a few minutes until medium peaks form. Cover and place in the fridge until ready to use.
4. Oreos: Place Oreos in a Ziploc. I like to to use the back of a metal ladle to pound and crush the Oreos into pieces. If you want a finer texture, keep pounding or you can use a food processor to make them more crumb like.
5. Assemble: Pour the hot fudge over the brownie base and spread out evenly. Heat the jar of hot fudge in the microwave for about 30 seconds to get it more pourable if needed.
6. Drizzle the peanut butter sauce over the hot fudge layer. You can swirl them together if you are feeling it. Then sprinkle the Oreos over the hot fudge/peanut butter layer evenly and then gently press them down to set into the hot fudge. Place the cake innto the freezer to set up for about 15 minutes. At this time, remove the Moose Tracks Ice Cream and place on the counter for about 15 minutes to soften.
7. Next, scoop the Moose Tracks Ice Cream onto the Oreo layer and spread out evenly. Use the entire quart. Drizzle chocolate syrup over the ice cream. (optional, but why not). Place back into the freezer for another 15 minutes to set.
8. Remove from the freezer and spread the whipped cream or cool whip out evenly on top. Sprinkle more of the crushed Oreos over that.
9. Cover with plastic wrap or foil and then place in the freezer for a few hours or ideally overnight to set up completely.
10. When ready to serve, remove the cake from the freezer and set out for about 10 minutes to soften slightly,. To help with slicing, dip a knife in hot water before cutting.
11. Place covered cake back in the freezer when not serving or to store for up to 2 weeks.
Make the layers ahead of time and then assemble when you are ready.
Use a box brownie mix or store bought for the base layer.
If making your own brownies, be sure to cool completely before ice cream cake assembly.
Set the Moose Tracks Ice Cream out on the counter about 15 minutes before assembly to soften it enough to spread out on the cake.
Make sure to place the finished ice cream cake back into the freezer for at least a few hours to set completely.
To make cutting slices easier, run the knife under hot water before cutting.
