4 boneless, skinless chicken breasts
salt/pepper
Olive Oil
1/4 cup onion, chopped
8 oz baby bella mushrooms, sliced
1 Tablespoon minced garlic
2 teaspoons ground thyme
1 teaspoon dried oregano
1 cup chicken broth (low sodium)
1 1/4 cups half and half
1/4 teaspoon crushed red pepper flakes
1 package gnocchi (17 oz)
1/4 cup shredded mozzarella
1/2 cups Parmesan, grated
3 oz baby spinach (3 cups)
1. Season chicken generously on both sides with salt and pepper. In a large skillet on med-high heat with a large drizzle of olive oil, cook the chicken breasts on 4 minutes each side. Remove the chicken and set aside.
2. In the same skillet, add another large drizzle of olive oil then add the chopped onions and mushrooms. Cook about 5 minutes. Add garlic, thyme, oregano and stir and cook another minute.
3. Add the chicken broth and then the half and half, bring to a simmer. Add the red pepper flakes and a large pinch of salt and pepper. Add in the gnocchi.
4. Place the chicken breasts back into the broth mixture and continue to cook on medium heat for about 10 minutes. Remove chicken again and cut into strips.
5. Add mozzarella and parmesan, stir together until melted. Then add the spinach and cook until wilted.
6. Add the sliced chicken back into the mixture and then serve!
