One Pan Creamy Chicken and Broccoli with Orzo

Easy, creamy, and made in one pan! This One Pan Creamy Chicken and Broccoli with Orzo is a quick 30-minute dinner perfect for busy weeknights and picky eaters.

Ingredients

Olive Oil

1 small yellow onion, diced

1 Tablespoon Minced Garlic

Orzo Pasta, 8 oz

3 cups Chicken Broth

1 cup Hiland Dairy Heavy Cream or Milk

2 cups shredded chicken, Rotisserie makes it easy

Frozen Broccoli (12 oz package)

1 teaspoon salt

1 teaspoon pepper

2 cups White Cheddar Cheese (Any Cheese works)

Instructions

 

  1. In a large skillet over medium heat, add a long drizzle of oil. Add the chopped onion to the pan and cook until soft. (about 3-4 minutes)  Add 1 Tablespoon of minced garlic and stir together and cook for another 2 minutes.

  2. Next, add the uncooked orzo, 3 cups chicken broth, 1 cup Hiland Heavy Cream or Milk, 2 cups chopped/shredded chicken, a package of frozen broccoli, 1 teaspoon of salt and pepper. Stir all together and bring to a simmer.

  3. Continue to cook for 20 to 30 minutes, stirring occasionally until thick and creamy and the orzo is soft.

  4. Remove from heat and sprinkle the shredded cheese over top and mix in. Serve and enjoy!
