Pancake Bites are a really fin and easy way to get your kiddos involved in the kitchen. (Or at least keep them occupied for a solid 20 minutes)

You can use a box mix or homemade, or like we did- a jazzed up box mix. Plus your favorite toppings- strawberries, blueberries, sprinkles, chocolate chips, bananas. Anything you have around is perfect!

Let the kids mix the batter and put their toppings in and make a mess. Leah was so excited to eat these when they were done. She had so much fun picking out her favorite ones…and taking a bite out of each.

Pancake Bites

Ingredients

Box Pancake Mix- follow directions and then add the ingredients below

3 Tablespoons sugar

2 teaspoons baking powder

2 Tablespoons vegetable oil

1 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 350 degrees. Spray a mini muffin pan with nonstick spray, set aside.
  2. Follow box instructions to make the batter. Then add the sugar, baking powder, vegetable oil and vanilla. Mix until combined.
  3. Spoon pancake batter into each cup about 1/2 full. Add your additions- get creative with combinations!
  4. Bake for 8-10 minutes. Remove and let cool for about 10 minutes before popping them out of the pan.
  5. Enjoy warm with butter and syrup!
