Sitting here on our deck, with a foo foo carmely coffee, cool weather, steady rain and the dabber sitting next to me. This is my happy place. So good. (I might also be watching the return of Danielle Staub on Real Housewives of New Jersey, but I feel like that cheapens the experience. So just keep that between you and me. K? Thanks.)

More of these fall like days are happening and it’s October so I’m off and running with my favorite fall desserts. And this one is good. Really good. I love an apple brown sugar type combo and then add a little toffee to the mix to give it that extra frolicking-through-the-leaves feeling. So good. 

Anyone else have what they want their fall to look like and then what it actually is? In my head, my fall days are spent in cute boots and scarves, carrying a coffee and strolling through a pumpkin field. In reality, I am in jogger sweatpants and a tshirt, taking Leah on a walk and wondering if she needs a jacket and buying pumpkins from a mom and pop stand. It may not be out of a magazine, but it’s still a nice little fall. 

The one thing that is constant though is my love of Fall food and desserts. Love. My absolute favorite time of year. These apple toffee bars are always a huge hit and a nice escape from the pumpkin overload. And again, this frosting is my favorite. Pretty sure I’ve put it on 9 out of 10 of the last things I’ve made. Not even sorry.

Apple Toffee Bars

Ingredients

⅔ cup butter, room temperature
2 cups packed light brown sugar
2 eggs
2 teaspoons pure vanilla extract
½ teaspoon kosher salt
2 teaspoons baking powder
2 cups all-purpose Flour
1 cup peeled, chopped tart apple
½ cup toffee bits
Frosting
½ cup butter
1 cup packed light brown sugar
¼ cup milk
2 cups powdered sugar

Instructions

1. Preheat oven to 350 degrees. Spray a 9×13 pan with non stick spray.
2. In a stand mixer, mix the butter and brown sugar for about 2 minutes on medium speed, until fluffy. Add the eggs, vanilla, salt, and baking powder and continue mixing until combined, scraping the sides of the bowl as necessary.
3. Add in flour, mix on low until just combined. Stir in the chopped apples and toffee bits. (taste the batter now. It’s incredible, right?)
4. Spread batter into the pan and bake for about 30 minutes until the center is set. Let cool completely, then frost.

 

Frosting Directions
1. Melt the butter in a medium saucepan. Add brown sugar and milk and bring to a boil. Remove from heat. Let cool for 5 minutes.
2. Stir in powdered sugar with a whisk and let cool until it thickens enough to spread.
Let frosting set for at least 30 minutes and then cut into bars.
