I understand that brownies from a box mix are really easy and taste pretty good. They get the job done with minimal effort. However, if you’ve got 15-20 minutes, can melt butter and throw some ingredients into a bowl (no mixer needed) then I challenge you to make these next time instead. I’m betting you won’t go back to a box mix again. 

 

These are super duper fudgy rather than a cake like brownie. I tend to do the classic mind game with these of “I’ll just take a tiny corner,” then proceed to “take a tiny corner” every time I’m in the kitchen. The next thing I know, half the pan is gone and my dog is looking at me. Judging me. And I can’t even give her any to make her understand just how good they are.

Chocolate Brownies

Ingredients

1/2 cup salted butter

2 cups semi sweet chocolate chips (1 cup for melting and 1 cup to put in the batter)

3/4 cup sugar

1/4 cup brown sugar

3 large eggs

1 teaspoon vanilla extract

1/2 cup + 2 tablespoons all purpose flour

2 tablespoons unsweetened cocoa powder

1/4 teaspoon salt

Instructions

1. Preheat the oven to 350 degrees and spray a 9×9 pan with nonstick spray or line with parchment or foil.

2. Melt the butter and 1 cup chocolate chips in a saucepan on medium heat until smooth. (you can also melt in the microwave- do 20 second increments and stir after each time)

3. A mixer or a good old wooden spoon will work for this recipe. Pour butter/chocolate mixture into your bowl and let cool for a few minutes before adding the next ingredients.

4. Now add the sugar and brown sugar to the bowl and stir until combined.  Add the eggs, one at a time and mix after each one. Add the vanilla and mix again.

5. Fold in the flour, cocoa and salt. Pour in the chocolate chips and stir together until just combined.

6. Pour the mixture into your pan, then bake for about 35 minutes or until a toothpick comes out clean. Allow to cool completely before icing.

7. Cut up some squares, grab a glass of milk and watch a Real Housewives marathon. No judgement here, I get enough of that from my dog.
