There is a cookie place in Omaha called Eileen’s Cookies. They have the softest, yummiest cookies. If someone brings Eileen’s to work, word travels quickly. Even if I’m trying to be good, once I hear it’s Eileen’s then I need to have one. Just have to. Okay, I sound like an ad for Eileen’s. Back to my point, they have an amazing Monster cookie. It’s soft and packed with goodness.
If you don’t know what a Monster cookie is, let me help you out. A monster cookie is a peanut butter, oatmeal, chocolate chip, m&m cookie. All. in. one. It’s ridiculous. Eileen’s has such a good one, so I went on the search for a really good recipe to make them at home. And I found it, did some tweaking and made a super soft, goody packed monster cookie.

1/2 cup (1 stick) salted butter, room temperature
1/2 cup packed brown sugar
1/4 cup sugar
3/4 cup creamy peanut butter
1 large egg
1 teaspoon pure vanilla extract
1/2 teaspoon baking soda
1 and 1/4 cups all purpose flour
1/2 cup quick oats
3/4 cup M&Ms (any size or variety)
1/2 cup semi-sweet chocolate chips
