I love these cookies. So much. They are a top 5 favorite. Also, my mom is an Oatmeal Raisin cookie connoisseur (I definitely had to look up how to spell that) and she said these are some of the best she’s had. I don’t want to oversell them, but they really are that good.

Oatmeal Raisin Cookies

If you are looking for a crisp on the outside and chewy in the middle cookie with a brown sugar flavor then this is your jam.

Ingredients

1/2 cup (1 stick) butter, room temperature
1/2 cup packed brown sugar
1/4 cup sugar
1 large egg
1 teaspoon pure vanilla extract
1/2 teaspoon salt
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1 cup old fashioned oats
3/4 cup raisins

Instructions

1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or Silpat and set aside.
2. In a mixer, beat the butter, regular sugar and brown sugar until fluffy, about 1 minute. Beat in the egg, vanilla extract, and salt, and mix to combine.
3. Remove from mixer and fold in flour, baking soda, and oats. Once combined, fold in raisins.
4. Scoop dough into 1 inch balls, rolling between your hands to make them perfectly circle. Place on prepared baking sheets, leaving about 2 inches between each cookie.
5. Bake for 11-12 minutes. Cookies will look underdone, but they will be perfect! Allow to cool on baking sheets for 10 minutes before transferring to wire racks to cool completely.
