These easy to make breakfast sliders with hawaiian rolls have saved my sanity and filled my tummy many a busy morning.

Layers of eggs, cheese, bacon, ham, greens and hawaiian rolls. All covered with a savory buttery sauce that also gives the rolls a little crispiness.

What kind of eggs to make?

You have a few options for the eggs in these breakfast sliders. My two go-to ways are regular old scrambled or sheet pan eggs.

I love using sheet pan eggs because they are easy to make plus can be made ahead of time really easily. All you do, is whisk your eggs with a little milk then pour onto a sheet pan with sides plus layered with parchment. Pop in the oven at 325 degrees for about 20 minutes.

Can I make these ahead?

Yes! You can absolutely make these breakfast sliders ahead of time. That is the beauty of this simple breakfast.

Layer everything and place in the baking dish, cover and place in the fridge until ready to bake. Once you are ready, brush with the melted butter mixture and then bake. Easy peasy.

Ingredients

1 pack of 12 Hawaiian sweet rolls

9 eggs, scrambled

6 slices ham (optional)

6 slices cheddar cheese

6 strips cooked bacon

3 oz baby spinach

2 tablespoons butter, melted

1 teaspoon black pepper

1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350 degrees. While the oven is preheating, scramble your eggs or make your sheet pan eggs and then set aside. Cook your bacon (or just use premade) and set aside.
  2. Slice the rolls in half lengthwise. Place the bottom half in a 9 x 13-inch baking dish. Spread the eggs evenly over the rolls, then layer on the ham, cheddar, bacon, and spinach. Top with the remaining rolls.
  3. In a separate small bowl, mix the melted butter, pepper and garlic powder together. Brush the tops of the rolls with the butter mixture. Bake for 20 minutes, or until the bread is golden brown. Slice into individual sliders, then serve.
