I like to think of myself as a popcorn aficionado. Okay, no one has ever said that about me but I do LOVE popcorn and we make it all the time in our house. It’s the perfect late night snack that hits my sweet or salty side, whatever I am craving. Anyone ever stopped by the movie theater just to buy popcorn? Yep, done it. Didn’t know that was a thing until my mom did it one time. Obviously the popcorn genes are strong in our family. 

Since I am old now, my perfect Friday night includes (in no particular order): couch, popcorn, chocolate, sweatpants, movie then bed. All by 11pm if possible. Okay, maybe I should put sweatpants at the front of that list. We all know that is the first thing that happens after I walk through the door. I used to be cool.

This caramel popcorn dream recipe right here hits the sweet side and is SO good and SO easy. You may become addicted, fair warning. Feel free to add more salt if you want a sweet and salty combo which I am also a fan. Happy sweatpants wearing weekend movie night!

Caramel Popcorn

This caramel popcorn dream recipe right here hits the sweet side and is SO good and SO easy.

Ingredients

1/2 cup unpopped popcorn kernels
1 cup salted butter
1 cup brown sugar
1/3 cup light corn syrup
1 teaspoon kosher or sea salt

Instructions

1. Preheat oven to 300 degrees. Line a large baking sheet with parchment paper or a silicone mat. Set aside.
2. Popping the popcorn: Choose whatever your favorite way is to pop popcorn. (We normally use one of those contraptions that you can pop in the microwave, but below is our second favorite way) In a medium size saucepan on medium to high heat, put 1-2 Tablespoons of vegetable oil and 2 kernels of the popcorn. Once the two kernels pop, then add the 1/2 cup of kernels to the saucepan and cover with a lid. Wait until you hear no more popping, then remove from the heat and place in a large bowl,
3. In a small saucepan melt butter, brown sugar, corn syrup and 1 tsp salt together over medium heat. Bring to boil. Boil for 4 minutes without stirring. Remove from heat and let it cool for 2 minutes.
4. Pour caramel mixture over popcorn and stir to coat evenly.
5. Pour popcorn onto lined sheet pan and place in oven. Bake for 30 minutes, stirring every 10 minutes. Once done baking, allow popcorn to cool completely.
