I love a good dessert obviously, but you gotta balance it out with some good stuff too. And these little beauties are a nice little mix of both. Super yummy stuff mixed with some healthy flax seed, oatmeal and chia seeds if you so desire. 

Pop these bad boys in the morning for a little pick me up or an after meal sweet snack that hits the spot but doesn’t make you feel like you are spiraling. (Like I may have done today with the bark thins- seriously that stuff is amazing and addictive. I need to get it out of my house). 

Dave had no idea these were semi healthy and had about 4 of them after dinner. “Are those good, dave?” “Yeah, what are they?”  I love that he trusts me enough to just eat whatever is around our house. 

I posted an insta story of these when I made them last week and had several people message me for the recipe. One friend mentioned she was going to try swapping her chocolate protein powder for the cocoa powder. Such a great idea and a fabulous way to add some more good stuff to these little energy balls.

I am such a fan of these, they kept me full, satisfied my sweet tooth and I didn’t feel guilty. Like I did after my barkthins binge. *face palm*

Chocolate Peanut Butter (No-Bake) Energy Bites

Easy to make, healthy no bake energy bites with all kinds of good stuff packed in.

Ingredients

1 cup old fashioned oats

2/3 cup toasted unsweetened coconut flakes (toasting instructions below)

1/2 cup peanut butter

1/2 cup ground flax seed

1/3 cup honey or agave nectar

1/4 cup unsweetened cocoa powder

1 Tablespoon chia seeds (optional)

1 teaspoon pure vanilla extract

Instructions

  1. Toasting Coconut- spread out a layer of coconut flakes on a baking sheet. Bake at 300 degrees for around 5 minutes. Watch very carefully and remove when starting to turn brown.
  2. In a medium size bowl, mix all the ingredients together. If mixture feels too dry, add a little more peanut butter or honey. If mixture feels too wet, add a little more oatmeal.
  3. Cover the bowl and chill the mix in the fridge for at least 30 minutes. Once chilled, roll into balls. Mine were about 1 inch diameter.
  4. Store in an airtight container in the fridge and pop at will.
