These gems are a combo of a red velvet cupcake and a seven layer bar. I know! It’s insane!

I needed to make something for a neighborhood barbecue this summer and searched for something a little different and little indulgent. Found this recipe at Sally’s Baking Addiction and went through my pantry to see if I had everything. Chocolate chips, check. White chocolate chips, check. Coconut, check. Pecans, check. Condensed milk, check. Sweet, let’s do this. 

These turned out so yummy and gooey and filled with lots of texture and flavor. Even better, was they were easy. Basically a red velvet brownie then layer everything on top. I’m a super duper fan and will definitely be making these again. Give these a try if you need something that looks impressive and is equally delicious.

Ingredients

1 and 1/4 cups all purpose flour
1 Tablespoon unsweetened cocoa powder
1/2 teaspoon baking powder
1/8 teaspoon kosher salt
1/2 cup unsalted butter, room temperature
3/4 cup sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 Tablespoon red food coloring
1 and 1/3 cups shredded coconut
1 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
1 (14 ounce) can sweetened condensed milk
1 cup pecans

Instructions

1. Preheat oven to 350 degrees. Line a 9×13 baking pan with aluminum foil or parchment. Set aside.
2. Whisk the flour, cocoa powder, baking powder, and salt together in a large bowl. Set aside.
3. In a mixer, beat the butter on medium speed for about 1 minute until smooth and creamy. Add the sugar and beat on medium speed until combined and fluffy, about 2 minutes.
4. Add egg and vanilla, mix on high speed until just combined. Scrape down the sides. Add the food coloring, mix again.
5. Add the dry ingredients a little at a time and mix on low until just combined. The dough will be thick.
6. Spread dough into the baking pan. Use a spatula to get it spread out into each corner and evenly dispersed.
7. Bake for 8 minutes, then remove from the oven. Sprinkle the coconut over the partially baked dough, then sprinkle the chocolate chips and white chocolate chips over the coconut layer.
8. Pour the condensed milk evenly over the top then sprinkle with pecans. Bake for another 25 minutes or until set. Cool completely before cutting, they will be messy otherwise.
