Reese’s Pieces Peanut Butter Halloween Cookies

Ingredients

½ cup butter, room temperature

1 cup brown sugar

½ cup smooth peanut butter

1 teaspoon pure vanilla extract

1 egg

1½ cups flour

½ teaspoon baking soda

¼ teaspoon salt

1 cup Reese’s Pieces

1 or 2 packages candy eyeballs

1/4 cup chocolate chips

Instructions

  1. Preheat the oven to 375F. Prepare a cookie sheet with a Silpat mat or nonstick cooking spray.
  2. In a mixer, beat together the butter and brown sugar until combined and fluffy. Add the peanut butter and continue to mix until well combined. Add the vanilla and egg and beat on low speed until combined.
  3. In a separate bowl, whisk together the flour, baking soda and salt. Add it to the peanut butter mixture and mix it until just combined.
  4. Remove from the mixer and stir in the Reese’s pieces and chocolate chips. Do NOT add the candy eyes before baking.
  5. Scoop dough into balls that are about 1.5 inches and place on the cookie sheet. leave a few inches between because they will spread a little. Flatten dough balls out a little bit.
  6. Bake at 375 degrees for about 10 to 11 minutes or until the edges start to turn golden.
  7. Remove from the oven and immediately press the candy eyes into the cookies. Let cool completely, enjoy!
