Iced Oatmeal Cookies

Classic Oatmeal Cookies topped with a sweet vanilla glaze. Crispy on the outside and soft on the inside.

Ingredients

1/2 cup (1 stick) butter, room temperature

1/2 cup packed brown sugar

1/4 cup sugar

1 large egg

1 teaspoon pure vanilla extract

1/2 teaspoon kosher salt

3/4 cup all-purpose flour

1/2 teaspoon baking soda

1 cup old fashioned oats

Glaze

1 and 1/2 cups sifted powdered sugar

1/4 teaspoon pure vanilla extract

23 Tablespoons milk

Instructions

  1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or Silpat and set aside.
  2. In a mixer, beat the butter, regular sugar and brown sugar until fluffy, about 1 minute. Beat in the egg, vanilla extract, and salt, and mix to combine.
  3. Remove from mixer and fold in flour, baking soda, and oats. Mix again on low until just combined.
  4. Scoop dough into 1 inch balls, rolling between your hands to make them into circles. Place on prepared baking sheets, leaving about 2 inches between each cookie.
  5. Bake for 11-12 minutes. Cookies will look underdone, but they will be perfect! Allow to cool on baking sheets for 10 minutes before transferring to wire racks to cool completely.

Glaze Instructions

  1. In a medium size bowl, whisk the powdered sugar, vanilla and 1 Tablespoon of milk.
  2. Add more milk a little at a time and mix together until you have a thick icing.
  3. Dip the tops of the cookies in the icing. They will set after a few hours.
