Anything with chocolate ganache is going to be a-okay in my book. It’s the simplest thing to make but tastes soooo good. What better way to use it than to add a little peppermint flavor and sandwich it between two sugar cookies. Genius, right?

These are my new favorite Christmas cookie. Sugar cookie, chocolate ganache and peppermint. All good. Easy to make (slightly messy) but easy. But messy just means you get to lick chocolate off your fingers plus a cookie. Winning all around.

Chocolate Peppermint Sandwich Cookies

These are my new favorite Christmas cookie. Sugar cookie, chocolate ganache and peppermint. All good. Easy to make (slightly messy) but easy. But messy just means you get to lick chocolate off your fingers plus a cookie. Winning all around.

Ingredients

Sugar Cookie Rounds (use refrigerated dough or might I suggest my easy sugar cookie recipe)

2/3 cup semisweet chocolate chips plus another 1/2 cup for top

1/4 cup heavy whipping cream

1/8 teaspoon peppermint extract

1/2 teaspoon canola or vegetable oil

crushed candy canes (about 8)

Instructions

  1. Once sugar cookie rounds are cooled. Set aside and start the chocolate ganache.
  2. Put 2/3 chocolate chips in a medium bowl, set aside. In a saucepan, bring the heavy cream to a boil. Once boiling, remove from heat and immediately pour over the chocolate chips.
  3. Stir choclate and cream until smooth. Stir in the peppermint extract. Refrigerate for about 15 minutes or until the ganache becomes a spreadable consistency.
  4. Spread the chocolate ganache over one cookie then place another cookie over the top to make your sandwich. Continue with remaining cookies. Set aside.
  5. Now in a medium microwave safe bowl, put the remaining 1/2 cup chocolate chips with the oil and microwave 30 seconds at a time, stirring after each time until smooth.
  6. Dip the tops of each cookie sandwich (or use a knife to spread) into the chocolate allowing the excess to drip off. Immediately sprinkle with crushed candy canes. Let stand until set.
