Chocolate Chunk Coffee Cookies

Put chocolate and coffee together and I am ALL in. Coffee brings out the flavor of chocolate and makes it tastes even richer and deeper than it does by itself. Also, for some reason, the chocolate chunks make this cookie even more special.

Ingredients

1 1/2 cups flour
1/4 teaspoon baking soda
3/4 cup (1 1/2 sticks) butter, softened
3/4 cup granulated sugar
1/2 cup packed brown sugar
2 Tablespoons coffee granules
3 Tablespoons freshly brewed coffee, cooled
1 large egg
1 teaspoon pure vanilla extract
1 cup semi sweet chocolate chunks
1 1/2 cups walnuts (optional)

Instructions

1. Heat oven to 325 degrees. Place parchment or Silpat on a baking sheet and set aside.
2. In a small bowl, combine flour and baking soda and set aside. In a stand mixer, beat butter, sugars and coffee granules until light and fluffy. Add in coffee, egg and vanilla and beat again on low for about a minute. Gradually beat in flour mixture until just blended. Stir in chopped chocolate and nuts (if using).Transfer dough to foil or plastic wrap, cover and refrigerate for 30 minutes.
3. Once refrigerated, scoop balls of dough into roughly 1 inch balls and place on the baking sheet.
4. Bake 10 to 12 min. or until golden brown. Cookies will look underdone. Cool on baking sheet for a couple minutes and then transfer to a cooling rack.
