File this under “weeknight dinners that are ridiculously easy but look very fancy.” You guys!! This is so easy!! Sorry, I’m yelling. Dave will eat chicken, but it wouldn’t be his very first choice. Give the man a steak. But we can’t have steak every day, we just can’t Dave. But Dave said the words “this is really good.” Which is big because he never says that about chicken.

I made my own balsamic glaze (which is really, really easy as well) but you can always buy your own balsamic glaze. I also added some pasta on the side, but you add whatever floats your boat. You really can’t go wrong. I also bought a new basil plant since I murdered my first one. I also grew Basil all summer….and then killed that too. Leah’s okay though, I promise.

Caprese Chicken

Easy dinner recipe using simple ingredients. Dresses up regular chicken to make a delicious and easy dinner everyone will love!

Ingredients

1 lb skinless chicken thighs (I like thighs, but breasts also work)

1 Tablespoon olive oil

salt and pepper

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried basil

sliced tomatoes

slices of mozzarella cheese

Balsamic glaze (recipe follows)

1/2 cup balsamic

3 Tablespoons brown sugar

Instructions

  1. Preheat oven to 325 degrees. Spray a baking sheet with non stick spray, place chicken thighs on baking sheet and drizzle with olive oil. Season with salt and pepper. Set aside.
  2. In a small bowl, mix the garlic powder, dried oregano and dried basil together. Sprinkle evenly over chicken breasts.
  3. Cook chicken in the oven for about 15-20 minutes or until done. Once done, remove from the oven.
  4. Balsamic Glaze: In a saucepan over medium heat, stir together 1/2 cup balsamic vinegar and 3 Tablespoons brown sugar. Bring to a boil, then reduce heat to low until mixture is reduced about half. (about 15 minutes)
  5. Once chicken is done, remove from the oven and place the mozzarella slices over the chicken. Place back in the oven for another 3-5 minutes until mozzarella is melty.
  6. Remove from oven, place tomato slices over the mozzarella and then fresh basil over that.
  7. Drizzle with the balsamic glaze (the best part). Enjoy!
