Lucky Charms marshmallow treats are the ultimate St. Patrick’s Day dessert! They’re easy to make, colorful and cute and so, so good. Learn how to make your own.
Top o’ the Mornin to ya! (Hopefully the Irish accent you said that with in your head is much better than mine.) I’m a major lover of Rice Krispie Treats (who isn’t, really?). So when I realized March was here and St. Patrick’s Day was rolling around soon, my Lucky Charm senses went off. Also, Costco had a giant display of them so they were literally in my face.
I have always loved celebrating St Patrick’s Day. But my celebrations look much, MUCH different these days than in my 20s. No more 10 am start times with a Bloody Mary, watching the bagpipers in a bar. I definitely can’t hang anymore.
These days my Saint Patrick’s Day celebration looks more like hanging out at home and making some fun Irish foods and holiday treats. This recipe for Lucky Charms marshmallow treats is definitely on the permanent St. Patrick’s Day rotation.
These are chewier than a regular Rice Krispy treat and have more marshmallow goodness packed into them. They’re a major hit with the kiddos and any adult who grew up loving Lucky Charms!
Try these out for St. Patrick’s Day this year and let me know what you think! Let me know if you love them as much as I do. Follow me over on Facebook and Instagram @lolohomekitchen. You only need three ingredients to make these St. Patrick’s Day treats. That’s right – just THREE!
If you’re shy about using butter in your recipes, then these treats are not for you. You’ll need a whole stick of butter for this recipe, but trust me – it’s worth it! You can use unsalted butter or salted. I prefer the salty-sweet flavor that salted butter gives this recipe.
A lot of the recipes for Lucky Charms marshmallow treats I see use mini marshmallows, but I prefer to use large marshmallows to make these. But at the end of the day, you can really use whatever marshmallows you have.
You’ll need an entire 11.5 ounce box of Lucky Charms cereal for this recipe. Don’t be afraid to buy a bigger box, though. You’re probably going to want to make a couple batches of these treats!
These might be the easiest St. Patrick’s Day dessert ever. They’re great to make with kids and they can be whipped up in a matter of minutes.
Step One: Melt the butter in a large pot over medium-low heat. Once it’s melted, add the marshmallows and stir until those are completely melted.
Step Two: Remove the butter and marshmallow mixture from the heat and stir in the Lucky Charms cereal. Keep stirring until the cereal is completely coated and everything is well combined.
Step Three: Pour the mixture into a 9×13-inch pan (coated with nonstick cooking spray) and press the mixture into an even layer. Let it cool and set until firm, then cut into squares.
These Lucky Charms marshmallow treats are pretty foolproof, but I do have a few tips for making this recipe even easier.
It’s hard to go wrong when you’re making Rice Krispie treats with Lucky Charms instead. But if you’re looking for ways to make this recipe your own, then I’ve got some fun ideas!
Use marshmallow fluff in place of marshmallows. Whether you don’t have marshmallows or you just prefer marshmallow fluff (also known as marshmallow creme), you can absolutely substitute fluff for marshmallows in this recipe. Use about 14 oz of marshmallow fluff and follow the recipe as written.
Add extra marshmallows. Lucky Charms marshmallow treats are so cute and fun as-is, but if you want your treats to be especially festive, you can try sprinkling some extra Lucky Charms marshmallows on top of the bars once they’re in the pan (press down on them a bit so they stick to the surface).
Add sprinkles. Toss some sprinkles into the cereal and marshmallow mixture to bring these treats to the next level. Plain green sprinkles or rainbow-colored sprinkles would both be really festive!
Dip the treats in chocolate. I love to dip Rice Krispie treats into melted chocolate to create a half chocolate-covered treat. It would be delicious to do the same thing with these Lucky Charms treats – especially if you used white chocolate with green food coloring!
Marshmallow treats with Lucky Charms are definitely best on the first day, but you can store and enjoy them for up to about 4 days. Store covered in an airtight container.
Yes, you can! If by some miracle you can’t eat all of these (or you just want to save some to enjoy later), you can freeze these for a few months. I recommend layering the bars between parchment paper and then putting in a Ziploc freezer bag or wrapping in plastic wrap. To enjoy later, simply remove from the freezer and let them defrost on the counter.
