Breakfast in our house is either grab what you can and go or an hour long production where I take the time to make something yummy and pretty. Usually pancakes or waffles or a skillet. Or if it’s Dave, blueberry muffins from a box mix, which I will never complain about because a) it means he made a meal an b) they are delicious.

These little egg bites fall into the grab abd go category BUT they taste like they were a breakfast production. They are easy to make ahead, easy to heat up and easy to eat with one hand while driving. I know this from experience. Many mornings of experience.

Only a few ingredients plus you have the freedom to add in any ingredients you want. Great little bite to add some veggies in as well. Make ahead and keep in the fridge to pop in the microwave.

Breakfast Egg Bites

Perfect little Breakfast Egg Bites that are easy to make ahead of time, heat up and pop for a quick breakfast. Add any filling you want to make it your personal little egg bite.

Ingredients

7 large eggs

½ teaspoon kosher salt

¼ cup milk

11/2 cups shredded monterey jack & cheddar cheese

8 slices cooked bacon, chopped into pieces

Instructions

  1. Preheat oven to 350 degrees. Spray a 12 cup muffin pan with non-stick cooking spray and set aside.
  2. In a large bowl, whisk together the eggs until smooth. Add the salt, milk, 1 cup cheese and bacon pieces and mix until well combined.
  3. Spoon the mixture into the muffin cups, filling each one ⅔ full. Sprinkle remaining ½ cup cheese evenly over filled muffin cups.
  4. Bake for 20 minutes or until the tops and edges start to turn golden. Let set in pan 5 minutes before removing from pan.
  5. Keep in an airtight container in the refrigerator for up to 5 days. When heating up, place in microwave for 20-30 seconds.
