I was attempting to take these photos and Leah wanted to “help.” Anytime a toddler wants to “help,” it means mom will have to do twice the work to clean it up. But in this case Leah did end up eating way too much chocolate but she also became the perfect little hand model. She was so proud of herself too, it was really cute.

Leah was a big fan of these chocolate cupcakes with strawberry frosting and I have a sneaking feeling you will too. Such a cute treat to celebrate Valentine’s Day with a real strawberry flavor in the frosting and rich chocolate flavor. Love!

Chocolate Cupcakes with Strawberry Frosting

Leah was a big fan of these chocolate cupcakes with strawberry frosting and I have a sneaking feeling you will too. Such a cute treat to celebrate Valentine’s Day with a real strawberry flavor in the frosting and rich chocolate flavor.

Ingredients

Chocolate Cupcakes

3/4 cup flour

1/2 cup unsweetened cocoa powder

3/4 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 large eggs, room temperature

1/2 cup granulated sugar

1/2 cup packed light brown sugar

1/3 cup vegetable or canola oil

2 teaspoons pure vanilla extract

1/2 cup buttermilk

Strawberry Frosting

1/2 cup butter, room temperature

31/2 cups powdered sugar

1/4 cup strawberry jam

2 tablespoons milk

Instructions

  1. Preheat the oven to 350 degrees. Line a cupcake tin with cupcake liners.
  2. In a bowl, whisk the flour, cocoa powder, baking powder, baking soda, and salt together and set aside. In a stand mixer or a large bowl, beat the eggs, sugar, brown sugar, oil, and vanilla together until completely smooth. Pour half of the dry ingredients into the wet ingredients. Then half of the buttermilk. mix on low for just a few seconds. Repeat with the remaining dry ingredients and buttermilk. Mix until just combined and try not to overmix.
  3. Spoon the batter into the liners halfway up. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely before frosting.

Strawberry Frosting

  1. In a mixer, beat the butter, powdered sugar, jam and milk until smooth. For more strawberry flavor, add more jam. If too thick, add a little more milk until desired consitency.
  2. Frost cooled cupcakes and enjoy!
