Snickerdoodle Truffles

All the great flavors of a Snickerdoodle cookie in a truffle surrounded by rich white chocolate. An easy no bake treat that is so yummy!

2 cups Snickerdoodle cookie crumbs, about 12 cookies

4 ounces cream cheese, softened

2 cups white chocolate wafers or chips, melted


  1. In a food processor, place the cookies and pulse until they are crumbs. Snickerdoodles are usually pretty soft, so you can crumble by hand as well.
  2. In a stand mixer, pour the cookie crumbs in plus the cream cheese. Mix on low until well combined.
  3. Prepare a baking sheet with a Silpat or parchment paper. Take about a Tablespoon size of dough and roll by hand into a ball. Place on the baking sheet. Repeat until all dough is used.
  4. Pl;ace in fridge to chill for at least 30 minutes but longer if able to.
  5. Once chilled, place the white chocolate in a microwave safe bowl and melt 30 seconds at a time and stir after each time until white chocoalte is smooth.
  6. Remove the truffle balls from the fridge. Using a fork, dip each balkl into the white chocolate to coat. Tap off excess white chocolate and place back on baking sheet. Immediately sprinkle cookie crumbs over top or sprinkles.
  7. Repeat with all the truffles. Store in the fridge until ready to devour!
