Lunch Lady Peanut Butter Bars

Ingredients

2 sticks (1 cup) butter, softened

1 cup sugar

1 cup brown sugar, packed

1 teaspoon pure vanilla extract

2 large eggs

2 1/2 cups peanut butter, 1 cup for the bars, 1 1/2 cups for the top layer

2 cups old fashioned oats

2 cups flour

1 teaspoon baking soda

1 teaspoon salt

Frosting

1 stick (1/2 cup) butter, softened

1/4 cup milk

2 teaspoons pure vanilla extract

4 Tablespoons cocoa powder

3 cups powdered sugar

Instructions

  1. Preheat oven to 350 degrees. Take a jelly roll/sheet pan with a lip/side to it (17/12ish) and spray with nonstick baking spray. Set aside.
  2. In a bowl of a mixer, cream the butter, sugar and brown sugar until fluffy. About 1-2 minutes.
  3. Add the eggs, vanilla and 1 cup of the peanut butter and mix again until everything is combined.
  4. Add the flour, baking soda, salt and oats then mix again on low until just combined. Dough will be thick.
  5. Pour the dough into the jelly roll pan and spread out evenly. Bake for 15 minutes or until a toothpick comes out clean.
  6. Remove from the oven and while the bars are still warm, spoon the peanut butter over the bars. Wait until the dollops get a little melty then spread the peanut butter evenly over the top of the bars.
  7. Let the entire thing cool and until the peanut butter is set up. In the meantime, make the chocolate icing.
  8. Icing: In a mixer, comnbine the butter, milk, vanilla, cocoa powder and powdered sugar and mix until nice and smooth.
  9. Once bars are cool and peanut butter has set, frost the bars with the chocolate icing. Cut and enjoy!
