Bringing the fun in funfetti to you with these super easy and majorly yummy Funfetti Shortbread Bites. Shortbread is incredibly easy to make and I’m betting you have all the ingredients in your house right now. Quick and easy.

Then add some sprinkles….lots of sprinkles. Chill and then the fun part, get your pizza cutter and roll, roll and cut into bite size pieces.

I love a bite size, poppable dessert. It’s dangerous but delicious and fun. These are so fun to make with kiddos. Leah’s favorite part was pouring in the sprinkles. Lots of sprinkles.

Funfetti Shortbread Bites

Ingredients

3/4 cup (1 and 1/2 sticks) Hiland Dairy salted butter, room temperature

1 1/2 cups all-purpose flour

1 Tablespoon cornstarch

4 Tablespoons powdered sugar

pinch of salt

1 Tablespoon pure vanilla extract

1/4 teaspoon alond extract

3 Tablespoons multicolored sprinkles

2 Tablespoons Hiland Dairy Milk

Instructions

  1. In an 8×8 baking pan, place a piece or parchment or foil in the bottom with enough to hang out the edges as well. Set aside.
  2. In a stand mixer, place butter, flour, cornstarch, sugar, salt, vanilla and almond extract. Beat on medium-high speed until you have a crumbly mixture.
  3. Add in the sprinkles and the milk, beat again until well combined. You will now have a soft dough.
  4. Place the dough in your baking pan and press into an even layer using your hands. Place in the fridge for 15-20 minutes.
  5. Preheat oven to 325 degrees and line a large baking sheet with a Silpat or parchment paper.
  6. Once chilled, lift dough out of baking pan an dplace on a cutting board or counter. Using a pizza cutter or knife, slice dough into bite size pieces. You can make them however big or small you like.
  7. Make sure bites are in a single layer with no overlap and bake for 12-14 minutes (depending on how big they are).
  8. Remove from oven and let cool. Store in an airtight container. Enjoy your funfetti bites!
