This classic Egg Salad is a favorite of mine since I was little. It includes a secret ingredient that my dad taught me. (thousand island dressing. shhhh….) It gives the sandwich just a slightly different taste, something special.

I usually make a batch of hard boiled eggs at the beginning of the week just for snacking and then inevitably, I have to make an egg salad sandwich. Twist my arm. Some super soft bread, dish up a big heaping spoonful of egg salad and then some chips right on top. Doesn’t matter which kind, all add their own delicious flair and crunch. Chips should be mandatory too, but I won’t completely fault you if you leave them off.

Egg Salad Sandwich

Classic Egg Salad Sandwich with a secret ingredient. Such a good twist!

Ingredients

8 hard boiled eggs

23 Tablespoons mayo

1 Tablespoon yellow mustard

2 Tablespoons Thousand Island Dressing

Salt and Pepper to taste

Instructions

  1. Peel and cut up hard boiled eggs in a bowl. Add mayo, mustard and thousand island dressing. Mix until all combined.
  2. Add a pinch of salt and pepper and mix again.
  3. Taste to see if more salt/pepper is needed. If consistency is too thick, add more may or thousand island.
  4. Dish up on bread and add your favorite toppings. (Might I suggest some chips)

Notes

– Definitely add chips right into this sandwich, trust me!
