Ingredients

12 lasagna noodles cooked according to package

1 pound ground beef

24 ounce bottle Marinara sauce

1/4 cup diced onion

1 Tablespoon minced garlic

1 teaspoon kosher sea salt

1/2 teaspoon ground pepper

1 teaspoon dried oregano

15 ounces Ricotta cheese

1 egg

1/4 cup parmesan cheese, shredded

3 cups shredded mozzarella cheese (divided)

2 Tablespoons chopped parsley

Instructions

  1. Preheat oven to 375 degrees. Cook noodles in a large pot of salted water, drain and drizzle with olive oil to keep noodles from sticking.
  2. In a large saucepan, cook ground beef over medium high heat until cooked through and no longer pink. Add onion and cook 2-3 more minutes until softened.
  3. Add garlic, salt and pepper. Stir and cook another minute. Add marinara sauce, bring to a simmer and then turn off heat.
  4. Spread about 1/2 cup sauce over the bottom of a 9×13 casserole dish. Set aside.
  5. In a large bowl, stir together ricotta, 1 egg, 1/4 cup parmesan cheese, 1 1/2 cups shredded mozarella cheese, oregano and parsley.
  6. On a sheet pan, arrange the cooked lasagna noodles out flat in a line. This will help with assembly. On each lasagna noodle, spread a scoop of the cheese mixture over the top pf each noodle. Then add a large spoonful of the meat sauce over the cheese. Roll noodles up and place in casserole dish.
  7. Spread remaining meat sauce over the top of the lasagna rolls. Then sprinkle the remaining 1 1/2 cups mozzarella cheese.
  8. Cover with foil and cook for 40 minutes. Then remove foil and put under the broiler on low for 2-3 minutes. Watch carefully so not to burn.
  9. Serve immediately, enjoy!
