Alright friends, I’m going to be brutally honest with you here. I’m not the biggest fan of root beer floats. You know when something happens to you as a child and then it’s in your brain forever. Yeah, that’s root beer floats for me. So I’ve had a root beer float 3 times in my life. All before the age of 12. Each and EVERY time, I threw up. Sorry, gross but this is the story. So since that age….I’ve NEVER had a root beer float. Until this past week in the form of a Root Beer Float Popsicle. And it was so good! (No throwing up, by the way)

I was thinking of fun ideas for ice cream week and root beer floats came to mind. Not for me, but because I know they are such a classic ice cream treat, how could I not include these. And then…Popsicles! Fun and different and incredibly EASY!!

So I made them. A little ice cream, a little root beer and freeze. Leah was constantly asking to have a “lollipop” so as soon as these were frozen, she got to be my taste tester. She LOVED these!! Then in true 3 year old fashioned, she wanted to share with mommy and she wouldn’t take no for an answer. So I took a small lick to appease her. Um, guys? It was soooo good! It was this creamy, root beer taste that was incredible! I then proceeded to have my own and then another the next night. The best part is they are so EASY!!

Honesty time again. I’m still not sure I can handle having an actual root beer float but I’m starting with these popsicles and pretty proud of myself.

Root Beer Float Popsicles

Root Beer Float Popsicles are the perfect way to have your favorite summer treat in an easy to eat popsicle form. Only two ingredients and takes only a couple minutes to assemble. Freeze and enjoy!

Ingredients

Root Beer

Vanilla Ice Cream

Popsicle molds

Instructions

  1. Let the vanilla ice cream sit out for about 5 minutes or until it becomes slightly soft.
  2. Fill each popsicle mold about 1/3 to 1/2 full of ice cream. Top off each mold with root beer. Since the root beer will foam, let it sit for a minute until that foam goes down and fill some more until you have liquid to the top of each mold.
  3. Insert popsicle sticks and place in the freezer. Let freeze overnight and serve. You can run the mold under lukewarm water for a minute to release the popsicles from the mold easier.
