This week we let Leah walk you through the art of making our Double Chocolate Chunk Muffins. They have the word muffin in them but they also have lots of chocolate and Leah is a fan of chocolate. These are so easy to make, literally just putting ingredients in a bowl, mix and spoon into the muffin liners.

Here’s my tip for cooking with kids. If you have the time, pre measure and set out the ingredients. So for this video, I measured the flour, sugar, etc and then laid them out in front of her. Keeps the mess a little bit better. (a little, it’s definitely still messy) and it keeps their attention because they get to do things quickly rather than getting into messes while waiting for mom or dad to measure out ingredients. I’ve had more than a few times when I left to go into the pantry and came out to Leah eating handfuls of brown sugar. Definitely worth the prep time.

Leah Likes…Double Chocolate Chunk Muffins

Ingredients

2 cups all-purpose flour

1/2 cup brown sugar

1/2 cup granulated sugar

1/2 cup unsweetened cocoa powder

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon kosher sea salt

6 tablespoons butter, melted

1 cup sour cream or plain greek yogurt

1/2 cup whole milk

2 large eggs

1 teaspoon pure vanilla extract

1 cup semisweet chocolate chunk

Instructions

  1. Preheat the oven to 375°F. Line a muffin tin with paper muffin liners.
  2. In a large bowl whisk together the flour, brown sugar, white sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate small bowl combine the melted butter, sour cream, milk, eggs, and vanilla and mix until combined. Pour the wet mixture into the flour mixture and mix until combined.
  4. Fold in the chocolate chunks until just combined, careful not to overmix. Batter will be thick,.
  5. Spoon the batter into each muffin liner just until full. Bake for 20 minutes or until a toothpick comes out clean.Cool in the pan for about 5 minutes and then remove and transfer to a cooling rack.
