Leah Likes: Monster Cookies

Hearing a 4 year old yell “Monstoww Cookies!” followed by a big roar is a life highlight everyone needs to hear. Leah was so excited to make these and I’m certain it was only for the name. Okay, maybe the M&Ms too. Or the brown sugar. So much brown sugar was eaten.

Ingredients

1 stick (1/2 cup) butter, room temperature

1/2 cup packed brown sugar

1/4 cup white sugar

3/4 cup creamy peanut butter

1 large egg

1 teaspoon pure vanilla extract

1/2 teaspoon baking soda

1 and 1/4 cups all-purpose flour

1/2 cup quick oats

3/4 cup M&Ms

1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Prepare a baking sheet with parchment, nonstick spray or a Silpat mat.
  2. In a mixer on high sped, mix the butter, white sugar and brown sugar together until smooth. About 3 minutes. Scrape the sides of the bowl down.
  3. Add the peanut butter, eggs, and vanilla. Mix on low until combined. Add the baking soda and flour a bit at a time, mixing after each addition. Scrape down the sides of the bowl again.
  4. Add the oats, M&Ms and chocolate chips, mix on low until combined.
  5. Roll the dough into balls, about 2 Tablespoons. Then place each ball on the baking sheet and flatten down the dough balls a bit. Be sure to press a few extra M&Ms on top to make it look fancy.
  6. Bake for 11-12 minutes. Remove and let cool for a few minutes then transfer to a cooling rack.
