Chocolate Peanut Butter Pie

Layer of Oreo crust, layer of rich chocolate french silk pie, then a layer of creamy peanut butter pie filling to top the whole thing off. It’s the ultimate peanut butter and chocolate lovers dream dessert!

Crust

20 Oreo cookies (filling and all) (you can also buy oreo cookie crumbs)

3 Tablespoons butter, melted

Chocolate Pie Layer

1 1/3 cups sugar

4 large eggs

8 ounces bittersweet baking chocolate, melted

2 teaspoons pure vanilla extract

10 tablespoons butter, room temp

1 1/3 cups heavy cream

4 teaspoons powdered sugar

Peanut Butter Layer

8 ounces (1 package) cream cheese, room temp

3/4 cup powdered sugar plus 2 tablespoons, separate

1 cup creamy peanut butter (real stuff, not natural)

1 cup heavy whipping cream

1 teaspoon pure vanilla extract

Instructions

  1. Crust: Preheat the oven to 350 degrees. Spray a 9-inch deep pie dish with non stick cooking spray.
  2. Place the Oreo cookies in a food processor and pulse until a sand texture. Add in the melted butter and pulse until combined. Pour the mixture into the pie dish and press down (using the bottom of a glass cup helps) into the bottom of the dish and up the sides as well.
  3. Bake for 10 minutes. Remove and cool completely. You can start the chocolate layer at this time.
  4. Chocolate Layer: In a small saucepan, whisk together the sugar and eggs together. Cook over medium-low heat, whisking constantly, until the mixture reaches 160°F and coats the back of a metal spoonthe mixture coats the back of a spoon. (about 5-7 minutes) Remove from the heat and add the melted chocolate and vanilla extract and stir together until combined and smooth. Sert aside to cool slightly.
  5. In a mixer, beat the butter for about 2-3 minutes until light and fluffy. Pour the cooled chocolate mixture slowly into the butter mixture while the mixer is going. Beaqt on high for about 5 minutes, scrape down the sides as needed.
  6. In a separate bowl with a hand mixer or stand mixer, beat the heavy cream and powdered sugar until it forms stiff peaks. Add this to the chocolate mixture and fold in by hand until combined.
  7. Pour the chocolate mixture onto the Oreo crust and spread out evenly. Place in the fridge to chill for at least an hour.
  8. Peanut Butter Layer: In a mixer, beat the cream cheese, 3/4 cup powdered sugar, and the peanut butter for about 3 minutes.
  9. In another bowl with a hand or stand mixer, mix the heavy cream, powdered sugar and vanilla extract untl stiff peaks form.
  10. Add the whipped cream mixture to the peanut butter mixture and fold in by hand until combined. Pour this over top the chocolate layer and spread out evenly. Chill the whole thing for 6-8 hours.
  11. Decorate with chocolate sauce, Oreo crumbles, peanut butter cups or just plain! Cut into slices while still cold and enjoy!
