So you’re looking at a box of Rice Krispies cereal in your pantry…you could have a bowl, you could make Rice Krispie Treats OR you could try something new and make yourself something easy, delicious, a little bit crunchy and a lot of sweet. Butterscotch Rice Krispie Cookies are such a fun way to change up your cookies!

These are incredible easy and so good! I made these with butterscotch chips and they were incredible. I love butterscotch. You could definitely use chocolate chips or white chocolate chips too if you are feeling fancy.

Pro tip- add some extra Rice Krispies to the tops of the cookie dough balls before you bake them to add some extra crunch!

Butterscotch Rice Krispie Cookies

Soft and buttery cookies packed with crunchy Rice Krispies and sweet butterscotch chips! A perfect yummy combo!

Ingredients

2 1/4 cups all-purpose flour

1 teaspoon kosher salt

1 teaspoon baking soda

2 cups rolled oats

2 sticks (1 cup) butter, room temperature

3/4 cup sugar

3/4 cup packed brown sugar

1 teaspoon pure vanilla extract

2 large eggs

1 cup butterscotch chips

2 cups Rice Krispies (plus extra for topping)

Instructions

  1. Preheat oven to 375 degrees. Line a cookie sheet with a Silpat mat or spray with nonstick spray.
  2. In a medium bowl, combine the flour, salt, baking soda and oatmeal. Then in a stand mixer, mix together the butter, white sugar and brown sugar until light and fluffy. About 2 minutes. Add the vanilla and eggs and mix again until combined.
  3. Add the flour mixture and mix again until just combined. Add the butterscotch chips and Rice Krispies and mix on the lowest speed until just combined.
  4. Roll dough into balls, about 1 to 1.5 inches. Press dough down slightly and add more Rice Krispies to the top. Bake for 7-9 minutes, until the edges start to get golden brown. They will look slightly underdone.
  5. Cool and enjoy with a big old glass of milk!

Notes
