These are a fun twist to a classic taco! All the flavors, the goodies, the cheese and the taco shell but packed into one baking dish. Plus, super easy because that’s how we roll around here.
You can always cook up chicken breasts and then shred them for this recipe, however, I just used rotisserie chicken and shredded it. Rotisserie chicken is delicious (I will recommend Costco’s rotisserie chicken all day) and this takes out a few steps that will save you time. I am all for a shortcut that saves time.
You can also use a pre made taco seasoning, however, if you have a few seconds and the ingredients to make your own, it is SO much better. Simple to do and tastes way better than the envelopes from the store.

We love these Baked Chicken Tacos in our house! Super easy dinner idea for those busy nights. Simple ingredients, quick to make and so yummy! Homemade taco seasoning, chicken taco shells and lots of cheese!
1 Tablespoon olive oil
1/2 cup onion, diced
1/2 pound (1 1/2 cups) cooked chicken, shredded (Rotisserie chicken for the win)
2 Tablespoons Taco Seasoning (Recipe below)
1 can diced tomatoes (14.5 ounce can), drained
1 can (4.5 ounce) chopped Green Chiles, drained
10 Stand and Stuff Taco Shells
8 ounces (1/2 can) Refried Beans
2 cups Mexican Blend Cheese
Your choice of toppings: Sour Cream, Salsa, Shredded lettuce, jalepenos, guacamole, etc.
Taco Seasoning
3 Tablespoons chili powder
2 Tablespoons ground cumin
1 Tablespoon garlic powder
1 Tablespoon onion powder
1 Tablespoon dried oregano
2 teaspoons paprika
1 teaspoon kosher salt
1 teaspoon black pepper
