I am obsessed with anything caprese. The perfect mix of tomato, basil and, of course, mozzarella. It’s such a good combination.
This salad takes the classic flavor and elevates it with pesto sauce and asparagus. It’s a perfect light summer salad with all that amazing caprese flavor. Incredibly easy to make and comes together very quickly.
I am always looking for a new, unique and delicious side dish involving veggies and this one does not disappoint.

All the best stuff of a classic Caprese Salad plus roasted asparagus. So easy to make!
1 bunch asparagus, washed and ends trimmed
Olive oil, salt and pepper
2 cups cherry tomatoes, cut in half
1–2 cups small mozzarella balls (or mozzarella cut into large pieces)
1/2 cup pesto sauce
1 Tablespoon fresh or dried Basil
1. Preheat oven to 350 degrees. Place asparagus on a sheet pan, drizzle with olive oil and sprinkle with a large pinch of salt and pepper.
2. Roast in the oven for 15-20 minutes. While asparagus is cooking, combine the halved tomatoes, mozzarella and pesto in a large bowl. Add in basil and mix again.
3. Once asparagus is done, remove from oven and place on serving plate then top with the caprese salad mixture. Serve and enjoy!
